  24. Italian sausage sauce---------------
  25. 2 links Italian sausage casings removed
  26. 6 large tomatoes
  27. 1 teaspoon sugar
  28. 1 teaspoon salt
  29. 1/2 teaspoon ground black pepper
  30. 1/2 teaspoon basil
  31. 1/2 teaspoon oregano
  32. 1 large onion diced
  33. Layer one---------------
  34. 16 ounces large curd cottage cheese
  35. 2 large eggs
  36. Layer two----------------
  37. 2 cup shredded mozzarella and provolone cheeses
  38. Top layer-----------------
  39. 1 cup shredded Swiss cheese
  40. 1/4 cup chopped parsley

Instructions to make to make Layer upon Layer

  1. Cook the pasta in water with salt and oil. Drain.
  2. Preheat oven 400 degrees Fahrenheit.
  3. Make the meatballs either fry or bake.
  4. Peel the tomatoes. See my recipe on how I peel a Tomato. Roast the peppers. Chop the ingredients coarsely. Mix all the ingredients for the sweet pepper sauce. Simmer 20-25 minutes. Add to the meatballs.
  5. Peel the tomatoes. Sauté the sausage, onions, and tomatoes. Mix all the ingredients for the pepper sauce. Simmer 20-25 minutes. Add the sliced olives and peas.
  6. Put the cottage cheese in a bowl with the eggs.
  7. Mix it up and set aside
  8. Mix the pasta and Italian sausage sauce. Put half in the 10 inch x 4 inch deep oven safe pan.
  9. Add the cottage cheese mixture to the top of pasta mixture.
  10. Add all the meatballs and sauce.
  11. Add mozzarella and provolone cheeses
  12. Add the rest of the pasta and sauce.
  13. Add Swiss cheese to top
  14. Sprinkle the parsley flakes
  15. Bake in the oven for 45 minutes.
  16. Serve I hope you enjoy!!
